I spent quite a bit of time making this gluten-free dessert and challenged myself to use as few ingredients as possible.
I wanted to create something that was quick and easy to make the day before Thanksgiving or another holiday.

Instructions
- In a food processor, combine eggs, coconut sugar and coconut oil

Stir in pecans and chocolate chips by hand

Put the filling in the base

Bake at 350°F for 40-50 minutes or until set

Low carb pecan pie
This Chocolate Pecan Cake isn't quite as low carb as some of my other recipes.
However, compared to the traditional chocolate pecan pie, it certainly qualifies as low carb.
This dessert is made with cups of corn syrup, sugar, and milk chocolate served in a carb-rich white flour crust.

I based this Chocolate Pecan Pie recipe on a recipe from my dear friend Karin, the founder of Sweet Mary Jane.
I studied her recipe and made several changes to make it gluten-free, dairy-free, refined sugar-free and lower in carbohydrates – this is the amazing result.
