    These gluten-free Korean pancakes are a household favorite – and SO easy to make! The wonderful thing about this particular recipe is that not only are the pancakes VEGAN and GLUTEN FREE, but the batter can also be prepared in advance and kept in the refrigerator for a few days before frying – making it a very easy meal!

    Korean pancakes

    • Combine 2 cups of dried yellow split mung beans and 6 tablespoons of dry calrose rice (medium-grain sticky rice from Japonica). Cover with water and soak for 4 hours.
    • Take 2 medium zucchini and rub them with the larger side of the grater. Put in a bowl and sprinkle with salt. Leave on for about an hour (this will drain the water).
    • Cut the fresh coriander or parsley into thin slices, then chop 6 spring onions.
    • After 4 hours of soaking, pour off all of the soaking liquid and place the mung bean and rice mixture in a blender along with 1 and 3/4 cups of fresh water to blend.
    • Roughly chop a large yellow onion and fry until translucent. Add to the batter in the mixer and mix, then pour into a large bowl.
    • Squeeze the salted water out of the grated zucchini and add the zucchini to the bowl. You can also add any extra vegetables at this stage. Green beans are lovely, red peppers diced really small is great. Peas and carrots are ok too. Fold them in the batter.
    • Drop the spoon (whichever size you like) into a pan with hot coconut oil. Let it harden and brown. Then turn and brown the other side. Remove and serve!

    Soaking the mung beans and rice before cooking them helps with digestion, and zucchini (or any other pumpkin) is a very easy-to-digest vegetable. If you are sensitive to onions, you can leave out both the green and yellow onions and they’ll still taste great!
