Here’s a warm, comforting dish that also works with my Minimize Gas and Gas Diet and the Maintenance Diet from my book Listen To Your Gut. This Chinese noodle soup recipe is great because it’s versatile – you can use egg noodles or gluten-free brown rice noodles, and use whatever broth you prefer (beef, chicken, or vegetable) as the base.
This recipe is also compatible with the diarrhea reduction diet.
As with all diets, it is best if you use certified organic ingredients for this and all recipes. Personally, I like to use a homemade chicken or vegetable broth and add mushrooms, seaweed and carrots, but you can also add or leave out any optional ingredients depending on your taste!
CHINESE NOODLE SOUP
Ingredients:
1 cup Chinese egg noodles or gluten-free brown rice noodles
Water for boiling + 1 tsp olive or coconut oil
2 cups chicken, beef or vegetable broth
1 tsp sesame oil
1/4 tsp garlic powder
1/4 tsp ground ginger (or a few slices fresh)
2-3 tbsp soy sauce (to taste)
Optional ingredients: almost cooked zucchini or carrots, mushrooms, seaweed, water chestnuts, baby corn, cooked chicken cubes, cooked beef strips, scallops, diced fish, etc.
*You can use organic canned or store-bought broth for this recipe, but like I said, it doesn’t have the same flavor or nutrients as homemade! If you don’t want to make the broths yourself, you can substitute filtered water with an organic vegetable, chicken, or beef bouillon cube dissolved in it (I use the Healthy Harvest brand). Use one organic bouillon cube per 2-3 cups of water. This is much better than using packaged, store-bought broths, which often have oil or thickeners added.
Directions:
- Add pasta to boiling water and 1 teaspoon olive or coconut oil and cook for 2 minutes.
- Drain the pasta and rinse under cold water.
- To the simmering broth, add noodles, sesame oil, spices, soy sauce, and whatever is optional
Ingredients you prefer. - Cook for 5 minutes and serve in bowls with a spoon and chopsticks.
This serves 2.
