Leek and Potato Soup has to be one of my all time favorite soups. It’s a creamy, soothing bowl with velvety goodness that is bursting with so much flavor with minimal effort you’ll crave for it. Once you’ve tried this homemade soup, every canned version that comes your way will get your nose turned up! It really is one of life’s greatest culinary joys – and now you can enjoy it even more because this healthy, slimming, world-friendly version is made without cream!

My dad actually recommended this product after starting his weight loss journey. He’s obsessed with homemade soup (and may I add his soup maker ..) and he was dying to bring soup to work. His company doesn’t have space for a microwave, so he invested in this fantastic soup thermos bottle. It keeps food hot for up to 6 hours! Perfect for soup, porridge, curry etc.
IS THIS LEEK AND POTATO SOUP SUITABLE FOR FREEZING AND REHEATING?
Yes absolutely! This one is perfect for batch cooking. They can be stored in an airtight container in the freezer for up to 2 months. Or store in the refrigerator for up to 5 days.
Heat in the microwave or on the hob until it’s hot!
IS THIS RECIPE WORLD-FRIENDLY?
Oh yeah it’s safe … as long as you count the milk from your wholesome extra, this soup is considered syn-free. Devour and enjoy however you want!

Syn Free Leeks and Potato Soup

- 1 onion [Diced]
- 300 g leek [Sliced]
- 450 g Potatoes [Peeled, Diced]
- 150 ml Whole milk [Take from Healthy Extra A]
- 650 ml Vegetable or chicken broth [Using 2 Stock Cubes]
- prize Ground black pepper
- ½ tsp Lemon juice
- prize salt

Put 100 ml of stock and onion in a pan. Let simmer for 3 – 4 minutes.

Add the rest of the broth, milk, leek, potatoes, pepper, lemon and salt. Cover with a lid and simmer for 10-15 minutes or until the potatoes and leeks are cooked.

Mix with a hand blender until smooth. Season to taste and serve.
Feel free to swap whole milk for Semi Skimmed or Skimmed. But I highly recommend using whole milk for the best result.
