Cheese taco mussels (ready in 60 seconds!)

This cheese taco shell recipe uses a microwave to make delicious, crispy containers for all of your favorite toppings!

These are great for Taco Tuesday and the kids will love them too.

Low-carb taco shells are gluten-free and come together in just a few minutes.

Step 1. Cheese circles

On a microwaveable plate lined with parchment paper, add your cheese and shape it into a circle. Try to make it about the size of a tortilla.

If you find that your parchment paper is curled up and causing problems, crumple it before you begin. This makes the paper more pliable and easier to manipulate.

Pro tip: Sprinkle the cheese with taco seasoning for even more flavor!

Step 2. Microwave

As soon as your cheese is shaped to your liking, place the cheese in the microwave for about 40-60 seconds. It depends on the power of your microwave.

At first the cheese melts, but eventually it becomes firm and crispy.

Keep a close eye and remove your cheese bowl from the microwave if the edges start to brown and get crispy.

Step 3. Form

Immediately after removing it from the microwave, bend the parchment paper to shape the cheese into a taco shape.

Secure it between two solid objects – I use two bottles of olive oil. It is important that you do this before it cools completely.

After about a minute, the keto taco shell hardens and forms the low-carbohydrate “crispy taco shell”.

Step 4. Topping

After your taco shell has hardened, it should be able to withstand all of your favorite toppings without any problems.

I make mine like Taco Bell with seasoned taco meat with cheese, shredded iceberg lettuce, and sour cream. I complete it with taco sauce, of course!

By the way, did you know that Taco Bell also offers low-carb options? When I’m out and about, I sometimes swing past the drive-thru and grab a protein bowl.

Can I do this in the oven?

Yes, but it will take a little longer. You also need to be extra careful shaping them as you will need to remove them from the parchment.

I highly recommend reading my recipe for crispy cheddar chips if you decide to go for the oven.

How do I make multiple bowls in the microwave?

Unfortunately, you have to make these babies one at a time. But the good news is that it takes almost no time!

Simply wipe your parchment with a paper towel between batches and repeat the process. The paper towel soaks up excess oil and keeps pollution to a minimum.

Taco variations

If you’re looking for something other than a typical taco, switch it through:

  • Swap ground beef for chicken or pulled pork
  • Adding various crispy greens like romaine, arugula, coriander or spinach
  • Try garlic aioli, chipotle mayo, or even Greek yogurt instead of taco sauce
