    Rich, pampering and creamy cheese and broccoli soup. Delicious and syn-free in the Slimming World plan when you use your Healthy Extra A.

    I have to admit that it took me a lot of tries to make this soup perfect. Four tries later and I found that I just weren’t using enough cheese to get the right flavor. In general, you’re looking for a cheese broccoli soup so that it actually tastes like cheese, right? I also wanted to keep the recipe with just 1 of our healthy Extra-A servings per serving. I finally smashed it. I’m bringing you one of the best soups you will try this year. It’s like velvet in a bowl.

    One of the things I love about making soups is that they are batch cook friendly. I love creating large servings that can be frozen and reheated for when I need a quick and easy meal. But this soup is also enough to feed the whole family for a hearty meal.

    Want to grab a soup to work but don’t have access to a microwave?

    My dad actually recommended this product after starting his weight loss journey. He’s obsessed with homemade soup (and may I add his soup maker ..) and he was dying to bring soup to work. His company is tight and wouldn’t do without a microwave, so he invested in this fantastic soup thermos bottle. It keeps food hot for up to 6 hours! Perfect for soup, porridge, curry etc.

    IS THIS RECIPE SUITABLE FOR FREEZING AND HEATING?

    Absolutely … let cool before storing in airtight containers. Place in the refrigerator for up to 3 days or in the freezer for 2 months. Thaw before reheating.

    Heat in the microwave for 2-3 minutes or stir on the hob until hot.

    IS THIS RECIPE WORLD-FRIENDLY?

    Absolutely…. The ingredients allow 3 servings. Each serving is worth 1 of your Healthy Extra allowances, which means it is syn-free.

    Syn Free Cheese & Broccoli Soup

    Losing weight from World Syns: ZEROThis soup allows 3 servings, each serving is worth 1 of your Healthy Extra allowances.Weight Watchers: Coming soon course Starter, main course, soup

    • 1 Big onion [Diced]
    • 1 clove of garlic [Crushed]
    • 800 g Frozen or fresh broccoli florets
    • 650 ml Boil vegetable broth [Made with 2 stock cubes]
    • 2 The original laughing cow triangle (17.5 g) [1 Healthy Extra Portion]
    • 60 g Cheddar cheese, finely grated [2 Healthy Extra Portion]
    • 1 tbsp Non-fat natural yogurt [Room temperature]
    • ½ tsp Mustard powder
    • salt pepper
    • Put the onion and garlic in a pan with 50 ml of vegetable stock. Cover with a lid and simmer for a few minutes until soft.

    • Add the rest of the broth, broccoli, mustard powder and season with salt and pepper. Cover with a lid and simmer for 20-25 minutes, or until the broccoli is tender.

    • Remove from heat and add the cheese triangles. Using a food processor or hand blender, stir the ingredients until smooth.

    • Stir in the yogurt and grated cheddar cheese over low heat. Stir for 1-2 minutes before serving.
